For the Fajita Seasoning

1½ tsp chili powder1½ tsp ground cumin1 tsp garlic powder½ tsp paprika ½ tsp oregano½ tsp sea salt¼ tsp ground black pepper

For the Fajitas

1½ pounds jumbo shrimp, peeled and deveined¼ cup olive oil, divided 1 lime 1 medium onion, thinly sliced2 red bell peppers, cored and thinly sliced 8 small flour tortillas

Avocado (or guacamole)Red cabbageCilantroJalapeñosSour creamSalsa

Makes 4 servings

– In a small bowl, stir together the seasoning ingredients.
– Pat the shrimp dry with paper towels. In a large bowl, combine the shrimp, 2 tablespoons of olive oil, the juice from half the lime, and the fajita seasoning. Toss until the shrimp are well coated. Set aside to marinate.
– Heat 2 tablespoons of oil in a large, nonstick sauté pan over medium heat. Add onions and peppers. Sauté for four to five minutes, or until softened. Transfer to a plate.
– In the same skillet, add the shrimp and cook for two to three minutes, or until they turn pink.
– Add the onions and bell peppers back into the skillet. Give everything a toss, and squeeze more lime juice on top.

Serve immediately with tortillas and toppings.
